Today we had lunch with Emma in her cafeteria. Only, this was no ordinary school lunch...the cafeteria workers, along with the Health and Nutrition Department at the Las Cruces Public Schools worked really hard to prepare Emma's Healthy Lunchtime Challenge recipe. Emma began working with everyone about a month ago to get ready and we did taste testings to get the final result just right. I have to say that the end result was very yummy. More than anything, it was really cool to walk in to the cafeteria and see Emma's wrap on every one's plate. They also included the Black Bean and Corn Salad that was a part of her recipe. The students who are making a documentary film featuring Emma were there to capture the moment. A crew from the local news also came out to interview Emma for a special segment this weekend. We are so grateful and appreciative that the school and the district did this for Emma. I know how hard it is to prepare healthy food with healthy ingredients...let's be honest, sometimes it is not cheap....but the district spared no expense so that the wrap could include avocados and nectarines, which are two things not usually seen on the school lunch menu. Everyone was so encouraging and supportive. The head lunch lady even had Emma autograph a copy of the invitation and is having it framed to hang in the cafeteria permanently. Thank you so much Hillrise.....this was a very good way to end Emma's elementary school experience. I don't think Emma stopped smiling all day!
