Saint Patrick's Day





We don't usually celebrate Saint Patrick's day around here, so it was a surprise to wake up on Sunday to a festive holiday breakfast.  The girls decided we needed to start celebrating so they got up early and worked their magic.  Shamrock shaped pancakes, anyone?  Matt and I were inspired to keep the celebration going and quickly decided that corned beef something should be on the menu for dinner.  After  a quick hike up A mountain we headed to the store to get our rations.  On the menu was corned beef paninis with coleslaw followed by mint chocolate chip ice cream for dessert.  All in all the day was a good excuse to eat good food and hang out together.  After a crazy week of juggling soccer practices with track practices and an intense all week practice schedule for choir, we were ready to do absolutely nothing.  After dinner we continued our slow trek through the entire 9 seasons of Little House on the Prairie.
