We're going to the White House for lunch!
Last month, Emma entered the Kids Healthy Lunchtime Challenge contest. It was sponsored by Epicurious and The First Lady in conjunction with her campaign to end childhood obesity. Each child had to submit a recipe that was healthy, creative and affordable. One winner from each state would be selected. That child, along with their parent would get to fly to Washington and attend a kids "state dinner" with Michelle Obama. We found out last week that Emma had won the contest and will represent New Mexico at the "state dinner". We are both super excited to go. We received our packet a few days ago with details and everything is really falling in to place. They have a few really cool events planned for us in Washington,in addition to the actual lunch. We will be getting a behind the scenes tour of the Julia Childs exhibit at the Smithsonian and we will be getting a tour of the south lawn and vegetable gardens at the White House with the White House chef. Needless to say, we cannot wait to go! Emma's winning recipe was titled Baked Chicken wrap with Nectarine and Avocado Salsa. She had to submit an entire meal so she also included our favorite black bean and corn salad with cumin dressing. Yeah Emma!
